I buy these knives every time I lose one. Also buy as gifts. Very sharp. Fits my hand. Love the serated edge for a clean cut through meat or tomatoes. Great knives.

These are very sharp knives that work well out of the box. I bought them because I also bought a Victorinox filet knife which is outstanding. These however are not nearly as substantial as the filet knife. The blades are very thin and flex too easily for a small knife that needs to be strong enough for coring where a jabbing motion is used.All that said, for the price you can't beat them. They are brutally sharp and keep the edge very well. Just take care because the blade will bend a little if you are trying to jab something with the point.July 23, 2012Regarding my previous review, I've made it a point to use these knives more just to verify my impressions. I have two other paring knives from expensive brands that are forged I'm sure, more bulk in the blade and very good knives. However, I'm realizing that for paring type work like peeling citrus or other tough skinned foods the thinner sharp blade is much superior to the heavier blades on forged knives. These things are spectacular for their purpose and the blade thinness I complained about before really doesn't hold up on more careful review. Give them five stars, regardless of the cost!
