I have gone for years using my chef's knife and cleaver to break down larger pieces of meat and to de-bone chicken. It was often frustrating work as the blades were too stiff and large to do a proper job. I bought this knife to make the job easier. I've used it a couple times since it arrived. It does a fantastic job. I broke down a whole top sirloin butt with ease and deboned and spatch-cocked a whole chicken. Having the right knife really cuts down on the time needed to do these things. Love the damascus patterned high carbon steel blade and the grip prevents the knife from slipping even when it gets covered with meat juices. Very happy with the buy.
